Spinach souffle

Ingredients
* Chopped Spinach, frozen, 10 oz pkg. * Eggs, fresh, 3 large * White or wheat Bread crumbs, 3 slices * Butter, unsalted, 3 Tbsp * *Flour, white, 2-3 Tbsp * Milk, 1%, 2 cup * Cheddar or Cheddar/Jack Cheese, 1 cup, shredded
Directions
Makes 6 large servings; Small Meal in itself; 10-12 people can use it as their vegetable side dish.

Rapidly thaw frozen chopped spinach in microwave or under hot running water. Meanwhile, make white sauce by slowly melting butter and stirring in butter to make thick paste. Next, slowly add 2 Cups milk, stirring constantly.
Add cheese as this comes close to thickening. Stir.
Grease large 4 qt, baking dish; I usually use a Round pyrex bowl, but you can also use a Bundt cake pan or flat 13x9" cake pan. Baking time will vary, so adjust accordingly.
Bake at 350 degrees for 60-70 mins., or 375 degrees for 55-60 min. depending on pan surface and size. For flat cake pan, it might be as little as 350 degrees for 35-40 min.
Wait for Souffle top to brown evenly and rise slowly. Serve immediately.
