Unstuffed Peppers with Chorizo

Ingredients
10 oz. chorizo1 lb. ground beef3 garlic cloves2 T. tomato paste1 can tomato sauce (14 oz?)1/2 c. beef broth or red wine1 large onion, diced3 large green peppers, 1" dicesalt and pepper to tastebrown rice, prepared according to pkg directions1/4 c. parmesan cheese2 T. butterA handful of chopped parsley for garnish
Directions
Brown ground beef, set aside. Cook chorizo. Add to ground beef on the side. In the drippings, cook garlic, onion and green peppers until crisp/tender (about 7 minutes). Add meat back in along with the tomato paste and stock/wine. Cook one minute or so until combined, then add the tomato sauce. Add salt and pepper along the way. Cook about 5 minutes until flavors are combined. This can be refrigerated at this point and warmed later to serve over the following rice dish.
Cook brown rice according to the directions on the package. Add butter and parmesan to the hot cooked rice and stir until combined. Serve the sausage and pepper mixture over the hot rice and enjoy!
