Red Lentil & Sweet Potato Curry

Ingredients
2 tbsp Butter, unsalted2 tbsp Curry powder1 tsp Salt1 med yellow onion, chopped3 medium Sweet potato, cut into cubes3 large Carrots, large cut4 medium whole Tomatoes, sliced into wedges2 cup Red lentils4 cups boiling water
Directions
Heat butter in a medium sauce pan on medium high. Add curry powder and stir. Add onion and salt. Saute until onions are slightly soft, about 2 minutes. Add sweet potatoes, carrots, and tomatoes, stir. Add lentils and then stir. Add boiling water. Reduce heat to low and cook for 20 minutes.
