Warm Green Beans and Brown Rice with Sesame Dressing

1/2 c. brown rice1 c. chicken stock1/4 t. salt1 t. dijon mustard1 clove garlic1 1/2 T. rice vinegar2 T. soy sauce2 t. sesame oil2 T. corn oilfreshly ground pepper1 1/4 lb. green beans1 T. sesame seeds1/2 c. raw peanuts
Makes 6 servings.
Rinse the rice well and drain. Place in a heavy saucepan with the stock and the salt. Bring to a boil, reduce the heat to low, cover and cook, without stirring, for 45 minutes; do not remove the cover. After 45 minutes, remove the cover and check to see if the rice is tender and the water is absorbed. If not, re-cover and cook for a few minutes longer until the rice is done. Uncover and fluff the grains with a fork.
Meanwhile, in a small bowl, whisk together the mustard, garlic, vinegar, soy sauce, sesame oil, corn oil, and salt and pepper to taste. Set aside.
When the rice is almost ready, fill another saucepan three-fourths full of water and bring to a boil. Add salt to taste and the green beans and cook until just tender, 5-7 minutes.
While the beans are cooking, place the sesame seeds in a small, dry frying pan over medium heat and toast, stirring constantly, until golden, 2-3 minutes. Set aside.
Drain the beans and place in a deep bowl. Immediately add the hot rice, peanuts, and dressing and toss to mix well. Place on a platter, garnish with the toasted sesame seeds and serve at once.
