Roasted Red Pepper & Cilantro White Bean Dip

1 can cannellini beans1/2 tbsp peanut butter1/2 tbsp honey1 tbsp olive oil1/4 tsp cayenne1 clove garlic2 tbsp chopped cilantro1 roasted red pepper
Serves 4-6 as a dip/spread
Drain & rinse the beans. Put in a food processor with peanut butter, honey, olive oil, garlic, and cilantro. Pulse until smooth. Taste for seasoning and add cayenne to taste. It may need more olive oil for texture and more cilantro.
Add the roasted red pepper and pulse just a few times, trying to leave some larger pieces of red pepper. Taste again for seasoning. You may need more honey and salt.
Enjoy with crudite, pita, chips, pretzels, or crackers.
