Sweet and Light Carrot & Apple Salad

Ingredients
Salad2 large Granny Smith Apples, cut into match sticks1 cup carrots, cut into match sticks1/4 to 1/2 cup diced red onion (to your own preferences)1/4 cup reduced sugar craisinsDressing3 TBSP apple cider vinegar3 TBSP honey3 teaspoons any dijon mustard2 TBSP extra virgin olive oil
Directions
Whisk the dressing and set aside.
Cut apples and carrots to matchstick size, combine with red onion.
Toss in the dressing, refrigerate for at least one hour before serving.
Sprinkle craisins on top before serving.
