Ingredients:Chicken Thigh, fried, 1 unit (yield from 1 lb ready-to-cook(remove)*Rooster Brand Coconut Milk, 1.5 cup(remove)Lime Juice, 1 lime yields(remove)Mushrooms, fresh, 1 cup, pieces or slices(remove)*Thai seasoning, 2 tbsp(remove)*Fish Sauce, 2 tbsp(remove)
Directions
Cook chicken thighs. remove meat and skin from bone, cut up meat. Throw meat and skin back into pot with remaining fat. Add mushrooms and chopped bok choi. Stir fry 5 minutes. Add coconut milk, 2 cans of water, seasoning, lime juice and fish stock. Simmer 20 Minutes.
