Annie's Primal Applepie muffins

Ingredients
6 mashed bananas, very ripe6 C old-fashioned rolled oats2 C milk5 large eggs1 t baking powder1/4 t baking soda1 t apple pie spice ( or cinnamon)1 t vanilla1/4 C dark chocolate chips1/3 C chopped walnuts2 T flax seed1 medium apple, cored and diced in thumbnail-sized piecesCooking spray
Directions
Preheat oven to 375 F.
1. In a large mixing bowl, combine all ingredients.
2. Prepare muffin tins by spraying liberally with nonstick spray.
3. Mix ingredients well and then fill muffin cups 3/4 full. Muffins don't rise very much.
4. Cook at 375 for 20-30 minutes, until tops are golden. Allow muffins to cool in tins before removing.
