creamy broccoli soup

Ingredients
1 medium cooking onion, 2 medium carrots, 2 medium stalks celery, 2 minced garlic cloves, 2 bunches broccoli,3 cups low sodium vegetable stock, tsp. black pepper or to taste. coconut oil or olive oil. 1 cup of evaporated non fat milk.
Directions
chop onion, celery, carrot. Cook these veggies until tender in oil. Add broth and the remainder of the veggies, finely chopped. Simmer until all veggies are tender. Add milk. Cool and puree with regular blender or immersion blender. Can be garnished with cheddar.
