Tuscan Bean Soup

Ingredients
2 T. Olive Oil1 cup chopped carrots1 sm. onion chopped1/2 clove garlic1 Cup chopped celery32 oz. Chicken Broth2 cans(15 oz.) Cannellini Beans(Drained and Rinsed)2-3 t. Italian Seasoning or Mrs. Dash Italian Blend5 oz. Fresh Spinach
Directions
Cook carrots, celery and onion in 1 T. of olive oil. Add broth, beans, and italian seasoning. Bring to a boil and cook until carrots are tender. In a skillet, cook spinach in remaining 1 T. of Olive oil, until just wilted. Add to soup. Serve.
