Elle's Mediterranean Beef Stew

Ingredients
2 lbs beef sirloin stew meat (cut into cubes)6 carrots, chopped1 sweet onion, chopped6 stalks celery, chopped3 lbs redskin potatoes, chopped3 tbsp. olive oilblack peppercumin4 cups tomato juice
Directions
Dredge stewing beef in corn starch. Brown in olive oil. Put in slow cooker. Use a little bit of beef broth or water to get the flavorful drippings from the bottom of the pan used to brown the meat - add this to the slow cooker as well.

Chop vegetables (I chop them pretty large and rustic, but use your preference on size) and add to slow cooker. Season with cumin and black pepper.

Pour tomato juice over ingredients. If necessary, add water so that liquids cover meat and vegetables.

Cook on low for 8 hours, stirring very occasionally. Add more seasonings as needed.
