Black Bean Rajma

1 cup dry black beans, soaked overnight or 6+ hours1-2 rounds fresh ginger1/8 t turmeric1 jalapeno or serrano, opened lengthwise, but intact.1/2 T coconut oil1 1/2 cup chopped onion1/2 T minced ginger1/2 T cumin1/4 t turmericcayenne to taste1 1/2 cup chopped tomatoes with juices1 cup chopped bell pepper (red or yellow)1 1/2 cup chopped packed spinach2 T lemon juiceoptional garam marsala
Soak beans for at least 6 hours and rinse. Simmer with ginger rounds, turmeric, and hot pepper for 45+ minutes, until done. Drain reserving cooking liquid.
In large pan, saute onion over medium heat in coconut oil until golden brown, about 15 minutes. About half-way through cooking, add next 4 ingredients (spices). Once onions are cooked 15 minutes, add tomatoes and cook addl 5 minutes. Then add bell pepper, spinach, cooked beans and salt. Heat through for 10-15 minutes. Finish with lemon juice and optional garam marsala.
Serving Size: Makes 4 servings
