1 great big pot of mashed potatoes (about 4 cups)2 cups chicken broth1 cup low-fat milkgrated low-fat cheddar cheese (use as much or as little as your conscience will allow, but I based it on 4 oz)
Make mashed potatoes. Add chicken broth and milk. Bring to a SIMMER. (you don't
want to see cream soups separate--it'll make you cry, and that'll happen if you boil
any milk based soup or sauce too hard.)
Stir it up. The serve it up. Top with a little cheddar cheese. Or more if you're feeling
kinda cheesy.
