Oatmeal Pancake with Blueberries & Flax

1/2 Cup Quaker Old Fashioned Oatmeal1/2 Cup Egg Whites1/4 tsp baking powder1/4 tsp cinnamon (or to taste)1/4 cup blueberries, fresh or frozen1 TBS vanilla protein powder (I use Lean 25)1 TBS ground flax seedMaple Syrup, Butter, other toppings optional
Mix all ingredients except for the optional toppings of your choice. Cook on medium in a skillet coated with cooking spray. Flip about 1/2 way through (when the edges are bubby and a crust has formed on the bottom and continue cooking until cooked through.
