Almond Encrusted Baked Halibut Steaks

Ingredients
10 (5 oz each) halibut steaks1-1/4 tsp salt, to taste1-1/4 tsp coarsely ground black pepper2-1/2 cup raw unsalted almonds1-1/4 cup all-purpose flour1-1/4 cup buttermilk
Directions
Makes 10 servings of one 5 oz halibut steak.

Preheat oven to 400 degrees F. Rinse the halibut steaks under cold water and pat dry with paper towels. Season with the salt and pepper.

Combine almonds with the flour in a food processor; process until the mixture is the consistency of cornmeal. Place flour mixture in a shallow bowl and pour buttermilk into another shallow bowl. Dip the halibut steaks into the buttermilk, drain off the excess, and dip into the flour mixture to coat evenly.

Place the coated steaks on a foil-lined baking tray and bake until the crust turns golden brown and the fish is cooked throughout, about 15-20 minutes.
