Apple Cinnamon Muffins

„X 3 cups flour„X 3 tsp cinnamon„X 2 tsp nutmeg„X 1/2 tsp each cloves and ginger„X 1 cup milk (1% used)„X 1/2 cup packed dark brown sugar„X 1/2 cup apple sauce„X 2 eggs„X 3 1/2 tsp baking powder„X 1/2 tsp salt„X 1/8 tsp baking soda„X 4 cups apples, peeled, cored and chopped„X 1/4 cup dark brown sugar„X 2 tbsp all purpose flour„X 4 tbsp oats„X 3 tsp cinnamon„X 2 tsp nutmeg„X 2 tbsp margarine
1. Start by preheating your oven to 425F. Spray a 12 cup muffin pan with cooking spray.
2. Mix together your topping ingredients (Last 6 ingredients listed)
3. Make sure the butter is cold. Cut it into the mix with a pastry cutter until it resembles coarse crumbs, then set aside.
4. Mix the first four ingredients together in a bowl.
5. In a separate bowl, mix in the rest of your ingredients minus the apples. You¡¦re really going to want to mix this until it¡¦s foamy. That way it¡¦ll incorporate more air into the mixture, making the result fluffier.
6. Mix wet and dry ingredients until JUST combined.
7. Then fold in your apples.
8. Scoop the batter into the cups. The muffin wells should be filled to the top as these don¡¦t bake out, they just rise.
9. Top with your streusel
10. Bake for 5 minutes at 425. Then lower your oven to 375 and bake for another 15 or so minutes. This technique helps the muffins to rise.
