100% Extra Virgin Olive Oil Cooking Spray, 0.25 grams100 grams brown onion - finely chopped2 Clove of Garlic, crushed100 gram Carrot, coursely grated100 Zucchini - coursely grated 50 grams Celery - diced 400 grams can Lentils, drained & rinsed 400 grams can crushed Tomatoes1/2 cup water
- spray large pan with oil
- cook onion & garlic until soft
- add carrot, zucchini and celery
- stir in lentils, tomatoes and water
- bring to simmer and cook covered for 25 minutes, stirring occasionally
