Crab Stuffed Zucchini

1 onion chopped1 garlic clove minced6 fresh mushrooms chopped (baby bellas or white)about 1/3 of a green bell pepper chopped1.5 cups italian style bread crumbsabout 1/3lb chopped imitation crab meat3 med-large zucchinis halved lons ways- center scooped out and about 1/4 cup of the center chopped and reserved 2Tbls olive oil
add onion, garlic, mushrooms, bell pepper, and reserved zucchini to a pan with the olive oil and saute until all are cooked. Toss in a bowl with bread crumbs, crab, salt and pepper. Fill zucchini "boats" with stuffing and spray tops with cooking spray and place in a 350* oven about 30 minutes until zucchini is cooked and breadcrumbs are browned. If you want the crumbs a little crispier, spray it again and turn the oven up to 450* for another 10 minutes or so until desired color and texture is reached.
