Mushroom Balsamic Vinegar Chicken (from MPS)

4 chicken breast halves2 T. EVOO2 garlic cloves chopped1/3 c. low fat/low sodium chicken broth2 pinches thyme2 T whole wheat flour (optional)8 oz. fresh mushrooms1/4 c. balsamic vinegar1 large bay leaf
Dust chicken breast halves in flour
In large skillet, sauté chicken in olive oil until browned on both sides, about 8 minutes.
Remove chicken
Add mushrooms to skillet and stir for one to two minutes
Stir in garlic, vinegar, chicken broth, bay leaf and thyme
Return chicken to skillet
Cover and cook about 6 minutes over medium heat.
Remove chicken, raise heat and cook uncovered over medium-high heat for about 5 minutes while sauce reduces.
Serve with the thin but incredibly delicious sauce.
