2T ground flax seeds6T water1c all purpose flour1c corn meal1/4c sugar4t baking soda3/4t salt1/4c oil1c soymilk (plain or unsweetened)
Preheat oven to 425. Bring water to a boil in a small pan, stir in flax, bring to the boil again and remove from heat.
Combine dry ingredients (flour through soda), add oil, flax mixture and soymilk. Stir until thoroughly combined. Pour into lightly greased baking pan, loaf, or muffin tin. Bake at 425 for 20-25 minutes or until surface cracks.
Makes 16 wedges when baked in a round cake pan, or 8 generously sized muffins.
variations: stir in 1/2c corn kernels/cheese/jalepenos before baking
