Black Eyed Pea and Cumcumber Salad

15 oz can black eyed peas, rinsed and drained1/2 cup English Cucumber, diced small (about 1/2 of a cucumber)3 green onions (scallions) chopped1/2 lime 2 tsp olive oil 1/4 tsp salt1/4 tsp pepper1/8 tsp cayenne pepper
Rinse and drain peas, chop cucumber into 1/4 inch pieces, chop scallions using as much of the green as you like.
Add lime juice, olive oil and spices. Refrigerate for at least 1/2 hour.
Serving Size: makes 4----1/2 cup servings
