Chicken Sausage Bolognese

Ingredients
1 lb. chicken Italian sausage2 Tbsp. extra-virgin olive oil1/2 cup yellow onions, diced3 cloves garlic, minced1 cup red (burgandy) wine2 (28 oz.) cans crushed tomatoes2 Tbsp. chopped Italian (flat-leaf) parsley1 Tbsp. fresh rosemary leaves, choppedSalt and white pepper (optional, to taste)
Directions
Heat olive oil in a saucepan over medium-high heat. Remove sausage from casings and crumble into saucepan; stir until browned. Add onion and cook for a few minutes until translucent, then add the garlic and cook until soft; do not burn. Makes 6 servings

Mix in the wine and add the tomatoes. Lower heat and lightly simmer for 20 to 30 minutes, stirring occasionally. Add the parsley and rosemary and continue cooking for another 15-20 minutes more. Stir occassionally and do not burn the sauce.

Season with salt and pepper, if desired and serve over your favorite pasta.
