Cheddar Corn Chowder

Place onion1 small onion, diced2 cups chopped carrots2 cups diced potatoes1 cup chopped celery3 Tbs butter1/4 cup flour1 cup skim milk1 cup fat free cheddar cheese1 can cream style cornsalt and pepper to taste
Place diced onion, chopped carrots, diced potatos, and chopped celery in a pot, cover with water (about one inch avbove vegetables) bring to boil. Reduce heat and cook about 30 minutes until veggie firm, but soft. Remove from heat. Add one can of cream style corn.
In the last ten minutes of cooking time, heat butter over medium heat in 10" skillet. Wisk in flour, cook about one minute. Slowly add milk, wisking constantly. This will make a white cream sauce. Once milk is added, then begin sprinkling in cheddar cheese, add all cheese, stir until melted in. Remove from heat. Add cheese mixture to cooked veggies. Salt and pepper to taste.
