1 teaspoon of Extra Virgin Olive Oil1 medium Onion, chopped small3 Garlic cloves, minced2 large Celery stalks, chopped1 Russet Potato, chopped small1 tablespoon Italian seasoning blend10 cups Beef Broth1 tablespoon Tomato Paste2 cups Mixed Vegetables, frozen1 cup Barley, Quick Cooking
Sauté onion and garlic in olive oil until transparent.
Add celery, potatoes, and Italian seasoning and sauté 5 minutes more.
Then add broth, tomato paste and bring to a boil. Add mixed vegetables and bring back to a boil.
Add barley and cook according to barley package directions about 10-12 minutes.
