Banana Applesauce Muffins

3 medium bananas2 cups flour ½ cup sugar½ cup brown sugar1 tsp baking soda2 eggs½ cup applesauce
1. Preheat oven to 350°F.
2. Coat 12-cup muffin pan with no-stick cooking spray or vegetable oil.
3. In a medium bowl, mash bananas with a fork. Set aside.
4. In a large bowl, stir together flour, sugar, brown sugar, and baking soda.
5. Add mashed bananas, applesauce, and eggs to flour mixture.
6. Mix until blended (do not over mix).
7. Bake 15-20 minutes or until toothpick inserted into center of muffins comes out clean.
8. Cool 10 minutes in pan.
9. Remove to cool completely on a cooling rack.
