Toasted Tempeh Salad (Mock Tuna/Chicken Salad)

Ingredients
Tempeh - 2ozSoy Mayonnaise - 1 Tbsp (or real mayo if you please, I used Nayonnaise) Spicy Brown Mustard - 0.5 tspCucumber - 0.33 cup small dicedGarlic Powder to tasteSalt and Pepper to taste
Directions
This is just for one person to have lunch. You can obviously very easily double or triple it.

Heat a pan with non-stick cooking spray. Crumble in tempeh, season with salt, pepper, and garlic powder.

Let cool while dicing cucumbers. Mix everything together and serve (I like it on a piece of bread, which is NOT included in the nutrition).

*You could do this without cooking the tempeh, but it only takes few seconds and tastes much better this way.
