Bacon, egg onion and cheese muffins

Ingredients
5 slices bacon, fried crispy and crumbled7 eggs3 oz cheddar cheese5 scallionssalt and pepper to taste
Directions
fry bacon until crispy. Drain and crumble.
Spray a 6 cup muffin tin with non stick spray.
Evenly distribute bacon, chopped scallion and 2 oz cheddar among cups.
Whisk eggs with salt and pepper to taste.
Pour over bacon/scallion/cheese to just below rim.
Top with more chopped scallion and the remaining cheddar.
Bake 350 for about 20 min...til browned on top and eggs are cooked through.
