Zucchini Carrot Potato pancakes (2 per serving)

Ingredients
1/4 cut milk (skim)2 eggs1 cup zucchini chopped1 cu carrots chopped1 cup potato chopped1 small onion quartered3 Tbs flour1 tsp salt1/4 tsp baking soda
Directions
Put in blender in order listed - except oil. Whiz in blender just enough to grate. Cook on lightly oiled griddle.

Serving Size: makes 18 3-4" pancakes. 2 pancakes per serving
