Tilapia with Lemon Caper Sauce

Ingredients
3 T water, divided1 t cornstarch1/2 t salt divided1/2 t pepper divided1 lb of Tilapia2 t olive oil1/3 C Lemon Juice1/4 t lemon rind
Directions
1. combine 1 T water cornstarch in a small bowl. stir with a whisj and set aside.

2. sprinkle 1/4 t of salt and pepper over both sides of fish.

3. heat olive oil in a large nonstick skillet over medium-high heat. add fish. Vook 3-4 minutes each side or until fish flakes easily. Remove from pan.

4. mix lemon rind, lemon juice, remaining water, salt, pepper and capers. Add lemo mixture to the pan, and cook for 2 minutes. Stir in cornstarch mixture; bring to a boil and cook 1 min or until thick. Serve over fish.

Serving size = 6 oz of fish + 1 T sauce
