Whey Whole Wheat Carrot Coconut Muffins

2 ripe bananas1 2/3 cup homemade liquid whey2 Tbsp honey and T stevia/sugar blendT cinammon, t nutmeg, 1/2 t ginger, pinch salt2 t vanilla2 T ground flax seed2 cups whole wheat flourtsp baking soda and tsp baking powder1/2 t 1 cup unsweetened coconut flakes2 to 3 cups grated carrot
Grease 20 muffin tins and preheat oven to 400
Mash bananas and add liquid whey. Stir in honey, sugar spices, vanilla and salt.
Stir in flax seed and then flour, baking soda and baking powder. Stir until just moistened.
Fold in carrots and coconut and also any nuts you want!
Bake 15 to 20 minutes
