Kale Salad

SALAD INGREDIENTS8 cups raw kale, broken into bite-sized pieces1 cup cherry tomatoes, cut in half1 cup green grapes1/2 cup red onion, sliced thin1/4 cup pepitas (pumpkin seeds), roasted, unsalted2.5 ounces feta cheeseDRESSING INGREDIENTS1/4 cup light olive oil1/4 cup Organic apple cider vinegar1-2 Tbs raw (local, if possible) honeydash of sea saltdash of fresh, ground pepperdash (1/2 tsp?) sesame oil
Assemble salad ingredients in a large salad bowl.
Mix dressing ingredients, EXCEPT sesame oil, in measuring cup. Warm through in microwave and mix well. Add sesame oil.
Toss the salad with the warm dressing (the heat of the dressing helps to soften the kale) and serve.
Serving Size: Makes 8 servings, approx 1.25 cups each
