October Feast Casserole

3 medium potatoes, cooked1/4 c. chopped onion1/4 c. butter1/4 c. +2 tbsp. all purpose flour1/2 tsp. salt (optional)1/4 tsp. pepper1/4 tsp. thyme2 cups milk1/2 lb. smoked sausage sliced thin1 cup frozen peas, rinsed and drained3 tbsp. bread crumbs1 tbsp. melted butter
Pare and slice potatoes to equal 2 cups. Cook onion in butter. Blend in flour and seasonings. Gradually add milk, stirring until smooth. Cook, stirring constantly until slightly thickened. Layer sausage, potatoes, peas, and sauce. Repeat layers, ending with sauce. Combine bread crumbs and butter. Sprinkle over sauce. Bake at 350 degrees for 20 to 30 minutes. Use 2 quart dish. Serves 4
