Caldo Verde with linguica

Ingredients
chop the onion, mince the garlic, slice linguica thinly, peel the potato & shred w/small holes of box grater. Stem & shred the kale.
Directions
Sautee the linguica in dry pot until slightly browned, then add the onions & cook until softened (about 5 min.) Add garlic & stir in for 20 secs. Pour in broth, bring to a simmer, stirring often. Stir in grated potato while stirring. Cover, reduce heat to low, simmer for 5 mins. Stir in the kale, cover stirring occasionlly & cook until kale is tender (about 25 mins). Stir in salt & pepper. Serve.
