Sweet Potato, Sausage and Farfalle Skillet

• 6 oz. farfalle• 2 Tbsp. olive oil• 1 lb. sweet Italian chicken sausage, casing removed• 1 med yellow onion, thinly sliced• 1 med sweet potato, peeled and cut into small dice• 1 Tbsp. balsamic vinegar• Approx. 1/2 tsp. each dried oregano, dried basil, dried sage• Kosher salt to taste• 4 cups kale, washed and cut into bite sized pieced (I cut the stem out and then tear it)• 1 garlic clove, minced or pressed• 3/4 tsp. kosher salt• 1/2 tsp. black pepper
-Cook pasta 8-9 minutes or until al-dente, drain and set aside
-Heat oil in large sauté pan or deep skillet. Add sausage, onions and sweet potatoes. Break up sausage with spatula or wooden spoon and stir to combine.
-Add in balsamic vinegar, herbs, and a sprinkle of salt. Cook until sausage is browned and potatoes cooked through.
-Add in kale, garlic, cooked pasta and salt and pepper. Toss to combine and cook until kale is wilted and cooked down.
Serving Size: Makes 4 generous servings
