Ingredients
1 tsp olive oil1/2 c shredded carrots3/4 c diced onions 1 stalk celery diced1 clove garlic minced3/4 c sweet potato with skin diced 1/4 cubes1 can black beans, drained1- 1 1/2 c grated cabbage1 can green beans1 c low sodium chicken broth1 c water1 c chopped zucchini1 c spinach leaves1/2 c endame1/2 c diced red peppers1 pinch oregano1/4 tsp cumin
Directions
Saute carrots, onions, celery, garlic in olive oil about 8 min. Add other ingredients. Bring to boil. Simmer 20 min. (Can saute then put into crock pot)

Serving Size: Makes a crock pot full
