Low Carb Scotch Eggs

Ingredients

1 lb of breakfast sausage1/4c shredded cheddar cheese5 eggs1Tbs coconut flouroptional: scallions
1. Bring saucepan of water to a rolling boil
2. Add 4 eggs to water and boil for 4 1/2 to 5 mins
3. Remove eggs and placed in a cold water bath to cool slightly
4. Peel eggs, be VERY gentle as the yolk is not set!
5. In a mixing bowl combine raw breakfast sauasge, cheese, remaining raw egg and cheese,coconut flour, optional scallions.
6. Make a patty in your hand and place a hard boiled egg in middle.
7. Mold the patty around the egg and top with more sauage mixture to seal the top.
8. Continue with all hard boiled eggs.
9. Place eggs in a oven safe non-stick skillet or an 8*8 baking dish.
10. Bake a 350* for 17-20 min or until sausage is cooked through.
