Lo Sodium Bacon, Egg & Potato Scramble

Ingredients
3 medium potatoes3 slices Kirkland Lo Sodium naturally smoked bacon, (cooked till crisp & drained on paper towel) chopped.1 T. Kirkland Meditteranean Blend Oil1/4 c. chopped onion3 eggs1/4 t. Mrs. Dash Garlic & Herb Seasoning1/4 c. Shredded cheese
Directions
Microwave potatoes till tender. Cool slighty so can handle to dice. Saute onion in oil till tender. Add chopped potatoes and cook till they begin to brown.
Scramble eggs in a bowl and add seasoning. Pour over potato mixture and cool till done. Add bacon and cheese and cover till cheese melts.
