Pumpkin Italiano (Pumpkin Lasagna)

2 Tbsp. vegetable oil1 large onion, thinly sliced2 1/2 cups fresh cubed pumpkin1 1/2 lbs. ground beef1 cup tomato sauceI clove garlic, minced1/2 tsp. cinnamon1/4 tsp. powdered gingersalt and pepper to taste1 cup cottage cheese1 egg, beaten
Heat oil in medium pan and sauté onion until transparent.
Add pumpkin and cook over medium-high heat until just tender.
Transfer onion and pumpkin to a 9x13 pan.
In same pan, brown the beef. Pour off excess fat and stir in tomato sauce, garlic, cinnamon and ginger. Simmer 10 minutes.
Add salt and pepper to taste. Spread the meat sauce over the pumpkin and onion.
Mix together the cottage cheese and egg. Spread it over all. Bake at 350 for 30 minutes
