African Ground Nut Stew

Ingredients
1 large onion, chopped6 cloves garlic minced1 tablespoon fresh ginger, peeled and mincedSaute in one tablespoon of olive oil for 2-3 minutes.Add 5 cups diced garnet (red) yams and sauté for another few minutes. Stir in:1 quart vegetable broth/stock1 teaspoon cayenne powder (or to taste)1 tbsp. salt (or to taste)1 tbsp. coriander powderBring to a boil and simmer for 15-20 min till potatoes are done. Stir in 1 cup crunchy natural peanut butter.Serve hot over steamed brown rice.
Directions
Add ingredients as listed. While preparing stew cook desired amount of steamed brown rice.
