Crockpot Orange Chicken

Ingredients
2 large carrots2 large green bell peppers3 cloves garlic4 boneless, skinless chicken breasts2 tsp. ground ginger1 tsp. salt1/2 tsp. pepper8 ounces orange juice concentrate, frozen2 Oranges
Directions
Peel and slice carrots (about 1/2 inch thick). Cut the bell peppers into 1/2 inch chuncks. Finely mince the garlic cloves.
Put carrots, peppers, garlic, then the chicken, ginger, salt, pepper & frozen orange juice inro the crockpot. Cover and cook on LOW for 4 to 6 hours.
Peel and segment the oranges and serve with the meal.
