Couscous Stuffing

Ingredients
Couscous (dry), 1 cupLow sodium chicken broth, 2 cupsAlmonds, .25 cup, choppedApricots, dried, .33 cups choppedShallots, 29 grams or 1 or 2 mediumFennel, .5 bulb finely choppedGarlic, 2 cloves mincedButter, salted, 2 tbspCinnamon 1/8 tspCummin 1/4 tspsalt and pepper to taste
Directions
Bring chicken broth to a boil. Add couscous and stir. Remove couscous (strain). Fluff couscous with fork. Keep reserve chicken broth. Set both aside.

Roast almonds.

Add butter to frying pan and melt. Add fennel and shallots. Mix and cook until soft. (about 5 min) Add garlic. Cook about 2 minutes. Add couscous, cinnamon, cumin, apricots and almonds. Mix. Add salt and pepper to taste.

You made need to add some of the reserve broth to the mixture to ensure stuffing holds together.

Add stuffing to your meat of choice.
For pork chops: butterfly the chops, add stuffing and insert toothpick to keep together. Place remaining stuffing (if any remaining) on top of the chops. Cook at 350 degrees for 40-45 minutes.
