Olive Oil, 2 1tsp (remove)Garlic, 2 cloves (remove)Celery, raw, 2 stalk, medium (7-1/2" - 8" long) (remove)Red Onion Raw (1/4 cup, 40g or 1.4oz), 0.5 cup (remove)Milk, nonfat (skim milk), 2 cup (remove)Spinach, fresh, 180 grams (remove)Couscous, 1 cup, dry, yields (remove)
Heat oil and saute the minced garlic, minced onion and minced celery and minced potato for 5 min. Add broth, milk; simmer for 10 min. Add 1/2 spinach, simmer 10 min. Cool slightly, puree in food processor. Add remaining 1/2 of spinach. Blend till smooth. Combine all.
Serving Size: Makes 2 good dinner servings and 2 lunch servings
