Homemade Wholegrain Mustard

Ingredients
2 tbsp yellow mustard seeds2 tbsp brown mustard seeds2 tbsp mustard powder4 tbsp wine2 - 4 tbsp white wine vinegar1/8 tsp salt (or to taste)
Directions
Combine mustard seeds in a coffee grinder or blender. Pulse several times to break up the seeds. The more pulsing the smoother the final product.
Transfer the pulverized mustard seeds to a glass or plastic container (do not use metal as it reacts with mustard and vinegar and will make the final product taste bad - and can etch the metal). Add the mustard powder and mix to combine. The combined dry mustard will look like fine breadcrumbs or sand. Heat the white wine in a microwave for 30 seconds. Add to the mustard and mix with a plastic or wooden utensil (I used a chopstick). Let this combination rest for 10 minutes. Mix in the vinegar one tablespoon at a time until the entire mixture is the consistency of...well of mustard. Cover the container and let it rest for 24 hours. Taste and add salt to taste.
