Arugala Salad with Diced Oranges and Avocado

Ingredients
6 - 8 cups baby arugula or fresh chopped arugula1 avocado, peeled and diced1 orange, peeled and diced1/2 lemon, juice only1 Tbsp. coconut oil, melted to liquid, but not hot
Directions
Combine the arugula with the avocado and the orange. (Peel and dice the orange with a paring knife over a plate and add any remaining orange juice to the salad.) Toss the salad with the lemon juice and oil.

(if coconut oil is solid, melt until liquid, but not actually hot)
