Spring roll wrappers, 16Chicken breast, 1#Peanut sauce, 1/2 cupCellophane noodles, 4 dry blocksColeslaw mix, 4 cupsFresh cilantro, 1 cupRed bell pepper, 1Green onion, 6Spring roll sauce, 1 cupChopped peanuts, 1/2 cup
Cook and shred chicken breast, add peanut sauce, cool. Prep: boil noodles 2 minutes, chop cilantro and onion and add to slaw, cut pepper in thin strips. Mix spring roll sauce with rice vinegar and chili garlic sauce if preferred. Soften wrap in hot water, add chicken, noodles, slaw, pepper in line in center, roll up, cut in half at a diagonal. Serve with sauce and chopped peanuts.
