basic mock potato salad

Ingredients
cauliflower 4 cupsplain nonfat Greek yogurt 1/4 cupmustard 1 tspcelery 1 cupgreen onion 3 tbspsalt & pepper as desired(if desired garlic and other spices)i go spice crazy :$
Directions
chop cauliflower into small bits that would mock the potato of a potato salad ( mostly the floret part the stem is surprisingly good a swell)

boil cauliflower in salted water tell fork tender

strain cauliflower and put in bowl to chill in fridge

while cauliflower chills chop up green onion and celery

add cauliflower, celery, green onion, Greek yogurt, mustard in bowl tell WELL mixed.

THEN add salt and pepper as well as other desired spices to bowl and mix to taste
