Ginger & Garlic Chicken Soup with Israeli Couscous

Ingredients
Dark Meat from one precooked rotisserie chicken Carrots, raw, 3 medium Celery, raw, 2 stalk, large (11"-12" long) Onions, raw, 1 medium (2-1/2" dia) Peppers, sweet, red, fresh, 2 small Mushrooms, fresh, 2 cup, pieces or slices Grated Ginger Root, 1 TBS Garlic, 3 cloves Israeli couscous (dry), 2 cup Chicken stock, home-prepared, 4 quarts
Directions
Cut up everything into bite sized pieces. Put everything, other than coucous into a large pot. Bring to boil, then reduce heat to medium. Cover and simmer for 25 minutes. Add Couscous and simmer for an additional 5 minutes. Remove from heat and let stand for 5 minutes
