Puff Pancake for One - 200 Calories

Ingredients
1/2 cup thawed frozen strawberries or peaches1 egg1/8 cup flour1/8 cup milkParkay Spray MargarineSugar Free Syrup2 tbsp Redi Whip Low Calorie
Directions
Beat 1 egg till bubbly. Stir in milk and flour. Spray Parkay, 5 squirts into Small round baking dish. I used tiny cast iron skillet. Pour egg mixture into sprayed pan. Bake in oven preheated to 400 degrees for 20 minutes. While baking, take 1/2 cup frozen fruit of your choice and cook in microwave 2 minutes. When pancake is done, it will have puffed up. Add fruit, syrup and whipped topping. Add cinnamon sprinkling if desired.
