Vegetable Orzo Risotto

Ingredients
2 Tbsp. olive oil1 medium red onion, chopped1 large carrot, peeled and diced1 large stalk celery, diced1 red bell pepper, chopped3 cloves garlic1 1/2 cups uncooked orzo pasta2 cans low-sodium chicken broth1/2 tsp. salt1/4 tsp. fresh ground black pepper
Directions
1. Heat oil in skillet over medium heat. Add garlic and onions and simmer till slightly tender. Add vegetables and simmer for 5 minutes. Add pasta, chicken broth, salt and pepper.

2. Bring to a boil, stirring occasionally. Cover and turn down heat to simmer. Simmer about 15 minutes till pasta is tender and broth is absorbed.

Serve with your favorite protein.
