Marsala Pork Chops

1 lb Pork Chops, fat trimmed (about 4 chops)1/2 cup White Flour1 Tbsp Olive Oil1/2 cup Marsala Wine (the real kind --not "cooking wine"-- has very little sodium and much more flavor)1 Tbsp Coarse Ground Mustard1/2 cup chopped Fresh Parsley1 1/2 Tbsp Heavy CreamSalt & Pepper to Taste
Heat oil in a large skillet. Dredge pork chops and flour and place in skillet. Cook on medium heat until done (no pink in the center), flipping occasionally, usually about 10 to 15 minutes.
Remove the pork chops from the pan and wrap in foil to keep warm.
Deglaze the skillet with the marsala wine. Add mustard and bring to a high simmer/low boil. Turn heat down to low and add the heavy cream. Cook on low for about 5 more minutes.
Stir in fresh parsley and cook for 1 minute more. Remove immediately from heat (this will retain the freshness of the parsley).
Arrange pork chops on plates and serve topped with the sauce. Rice or Mashed Potatoes go very well with this sauce.
